Stuffed Tomatoes
- 1 Tomato
- 3 finely chopped Eschallots (use 1/2 an onion if you have no eschallots but make sure you lightly fry it up first to soften the flavour)
- 1 clove of crushed garlic
- small handfull of grated cheese (rennet free, mild flavoured)
- 1 large tablespoon of breadcrumbs
- a little chopped parsley
- cracked pepper and salt (I'm using a really nice flaked river salt)
- Cut tomatoes in Half. Scoop out flesh and chop
- combine all ingredients and mix
- Fill each tomato half with mixture (no need to press down too much)
- Bake @ 170°C (338F) for 15 min.
